Yellow Split Pea Soup

This is a beautiful thick soup just right for winter, I used 2 packets of different peas and lentils the vegetables are your choice. You could use cauliflour, broccoli zuccini.

 

Ingredients

  • 1 packet yellow split peas
  • 1 packet red lentils
  • carrots
  • pumpkin
  • potatoes
  • celery
  • 2 litres chicken stock either bought or home made
  • water
  • salt and pepper

Method

  • soak peas and lentils in a large pot, preferably over night, next morning strain off the liquid and rinse, place peas and lentils back in pot
  • cover with the chicken stock and add extra water as the peas will thicken
  • add all your chopped vegetables
  • season with salt and pepper, I also added a bit of curry powder
  • cook over medium heat stirring often so the soup doesnt stick then lower heat till vegetables are cooked, add more water if it is too thick
  • use a blender stick or vitamiser to liquify till fairly smooth
  • season to taste again
  • serve with a dollop of sour cream
  • leftovers can be frozen , I got 9 takeaway containers from this batch, enough for 2 people in each one
