White Chocolate and Walnut Fudge
Cupcakes don't have to be simple, in fact I am enjoying the process of seeing just how many flavours I can get into a single cupcake. This batch has chunks of walnut and white chocolate through a vanilla cupcake, with a butterscotch creme cheese frosting and a fudge covered walnut on top.
Ingredients
- 150 grams butter
- 100 grams sugar
- 2 eggs
- 150 grams self raising flour
- 1/2 cup white chocolate
- 1/2 cup chopped walnuts
- 2 teaspoons of vanilla essence/extract
Method
- Cream butter and sugar by softening over a water bath and whisking
- Add eggs and continue to whisk
- Stir through flour
- Mix in white chocolate and walnut chunks
- Bake in cupcake cases inside a muffin tin for about 22 - 25 minutes depending on the size
- Test they are cooked by poking with a skewer and checking it comes out clean

Frosting
- 100 grams cream cheese
- Butterscotch flavouring (oil if adding to chocolate)
- 100 grams white chocolate
- 25 grams of butter
- 1 cup icing sugar
- Whip butter and cream cheese from room temperature with a whisk.
- Melt chocolate over a water bath
- Add a few drops of flavouring oil to the chocolate
- Mix chocolate into butter and cream cheese
- Mix in icing sugar until a smooth consistency to pipe from a bag
- If too hard, add some milk 1 teaspoon at a time
