White Chocolate and Walnut Fudge

Cupcakes don't have to be simple, in fact I am enjoying the process of seeing just how many flavours I can get into a single cupcake. This batch has chunks of walnut and white chocolate through a vanilla cupcake, with a butterscotch creme cheese frosting and a fudge covered walnut on top.

Ingredients

  • 150 grams butter
  • 100 grams sugar
  • 2 eggs
  • 150 grams self raising flour
  • 1/2 cup white chocolate
  • 1/2 cup chopped walnuts
  • 2 teaspoons of vanilla essence/extract

Method

  • Cream butter and sugar by softening over a water bath and whisking
  • Add eggs and continue to whisk
  • Stir through flour
  • Mix in white chocolate and walnut chunks
  • Bake in cupcake cases inside a muffin tin for about 22 - 25 minutes depending on the size
  • Test they are cooked by poking with a skewer and checking it comes out clean

 

White chocolate and almond fudge cupcakes

Frosting

  • 100 grams cream cheese
  • Butterscotch flavouring (oil if adding to chocolate)
  • 100 grams white chocolate
  • 25 grams of butter
  • 1 cup icing sugar
  • Whip butter and cream cheese from room temperature with a whisk. 
  • Melt chocolate over a water bath
  • Add a few drops of flavouring oil to the chocolate
  • Mix chocolate into butter and cream cheese
  • Mix in icing sugar until a smooth consistency to pipe from a bag
  • If too hard, add some milk 1 teaspoon at a time
