Wendy's Lemon Tea Cake
This yummy syrup tea cake is a decadent afternoon treat. It was given to me by some fellow travellers caravanning around Australia
Ingredients
- 1 1/2 cups S.R flour
- 1 cup sugar plus 1/4 cup extra
- 1/2 teaspoon salt
- 1/4 lb butter
- 2 eggs
- 1/2 cup milk
- grated rind of 1 lemon
- 1/2 cup chopped walnuts
Method
- Sift Flour, add sugar and salt into a bowl, rub in butter
- Combine beaten eggs and milk and stir into mixture
- Fold in lemon rind and walnuts
- Pour into round 20cm greased tin and bake in moderate oven about 50 minutes
- Mix juice of lemon and 1/4 cup sugar.
- Immediately cake comes out of oven spoon juice over cake
- Leave in tin to cool
