Wendy's Lemon Tea Cake

This yummy syrup tea cake is a decadent afternoon treat.  It was given to me by some fellow travellers caravanning around Australia

Ingredients

  • 1 1/2 cups S.R flour
  • 1 cup sugar plus 1/4 cup extra
  • 1/2 teaspoon salt
  • 1/4 lb butter
  • 2 eggs
  • 1/2 cup milk
  • grated rind of 1 lemon
  • 1/2 cup chopped walnuts

Method

  • Sift Flour, add sugar and salt into a bowl, rub in butter
  • Combine beaten eggs and milk and stir into mixture
  • Fold in lemon rind and walnuts
  • Pour into round 20cm greased tin and bake in moderate oven about 50 minutes
  • Mix juice of lemon and 1/4 cup sugar.
  • Immediately cake comes out of oven spoon juice over cake
  • Leave in tin to cool
