Wazza's Caramel Dumplings

Oh my, these beautiful Caramel Dumplings bring back many happy memories of bush camping and enjoying them while sitting around our campfire, it used to be a fight to get to scrape out the caramel sauce from the camp oven.

Ingredients

  • 1 1/4 cups S.R flour
  • pinch salt
  • 30 gm ( 1oz) butter
  • 1/3 cup sugar
  • 1 teaspoon vanilla
  • 1/3 cup milk

Caramel Sauce

  • 30gm butter
  • 1 1/2 cups brown sugar, firmly packed
  • pinch salt
  • 1/12 cups water

Method

  • Sift flour and salt into a bowl
  • rub in butter and add sugar
  • add combined milk and essence, mix well
  • drop tablespoons of dumpling dough into simmering sauce
  • cover and simmer 20 minutes
  • serve with cream

Sauce

  • Combine all  ingredients in lare saucepan
  • stir constantly until boiling
  • reduce heat

The dumplings can be cooked in a large pan on your stove or in a camp oven over the coals of your campfire, just be careful not to let them get too hot or the caramel sauce will burn
