Turkey Wing Curry
This delicious African inspired Turkey Casserole is a great winter dish, packed with healthy vegetables and deep flavours. Allow a few hours for cooking, it's worth it!
Ingredients
- 8 large turkey (or chicken) wings or drumsticks.
- 3 small onions
- 1 large potato
- 1 large sweet potato
- 1 stalk of celery
- 500grams of mixed beans
- About 2 cups of pumpkin
- 6 cloves of garlic
- 1 tin diced tomato or 4 large tomatoes diced
- 2 teaspoons of coriander powder or fresh
- 2 teaspoons of turmeric powder
- 2 teaspoons of paprika powder
- 2 teaspoons of cumin seed powder
- Handful of fresh basil leaves
- Cayenne pepper to taste (HOT! Start with less than ¼ of a teaspoon and add to taste)
- Salt
- Olive Oil
Method
- Chop all vegetables into 1 inch chunks
- Cut small onions into quarters
- Add to a large pot with about 2 litres of water or stock
- Fry turkey wings in a pan with some olive oil until edges are golden brown and sealed
- Add all ingredients into pot and simmer on low heat for 2 - 3 hours
- Add spices after about 1 hour and add more water if ingredients aren't covered
Serve
- On a bed of rice
- With noodles of almost any kind
- On pasta
- In a hollowed out crusty bread loaf
