Tropical Delight

Summer will never be the same again with this healthy fruity drink that kids and adults alike will love on a hot day. It's a dairy free smoothie and can be made super-healthy by leaving out the ice-cream. Vanilla soy milk is flavoursome enough that I generally leave the ice-cream out and rely on the frozen fruit for creaminess.

Ingredients

  • 1/2 cup frozen mango flesh
  • 1 x frozen apricot
  • 1 frozen banana
  • 1/2 cup of tropical fruit juice
  • 1 scoop of vanilla soy ice-cream
  • 200ml vanilla soy milk
  • 1/2 passionfruit
  • Squirt of lime or lemon juice for extra zing

Method

  1. Add all ingredients to blender or food processor and blend for 4 minutes

Serve

  • In a tall glass with passionfruit pulp on top or a fruit garnish like a piece of strawberry and banana
