Tony's Date Scones

Who can resist a freshly baked scone, whether it be a fruit scone or plain with whipped cream and strawberry jam, wicked!!  Only takes a few minutes to whip up a batch and you will have all the ingredients in your pantry

Ingredients

  • 250gms plain flour
  • 15gms baking powder
  • 60gms butter, straight from the fridge, it rubs in better
  • 40 gms castor sugar
  • 1/4 pint milk
  • 1/2 cup chopped dates if liked

Method

  • sift flour and baking powder
  • rub in butter till it resembles fine breadcrumbs
  • stir in sugar and dates
  • add milk and mix with fork, do not overmix
  • put onto lightly floured board and knead gently
  • pat down to 2cm thickness
  • cut rounds with 5cm cutter
  • place with sides touching into a lightly greased cake tin
  • lightly brush tops with milk
  • bake in hot oven for 15 to 20 minutes, all ovens are different so times will vary
  • cool on racks
  • serve as desired with a cuppa
