Tony's Date Scones
Who can resist a freshly baked scone, whether it be a fruit scone or plain with whipped cream and strawberry jam, wicked!! Only takes a few minutes to whip up a batch and you will have all the ingredients in your pantry
Ingredients
- 250gms plain flour
- 15gms baking powder
- 60gms butter, straight from the fridge, it rubs in better
- 40 gms castor sugar
- 1/4 pint milk
- 1/2 cup chopped dates if liked
Method
- sift flour and baking powder
- rub in butter till it resembles fine breadcrumbs
- stir in sugar and dates
- add milk and mix with fork, do not overmix
- put onto lightly floured board and knead gently
- pat down to 2cm thickness
- cut rounds with 5cm cutter
- place with sides touching into a lightly greased cake tin
- lightly brush tops with milk
- bake in hot oven for 15 to 20 minutes, all ovens are different so times will vary
- cool on racks
- serve as desired with a cuppa
