  • 1 large tomato (try to match the tomato size with the width of the squash if possible)
  • Olive Oil
  • 30-50 grams of Parmesan Cheese
  • Salt & Pepper

OPTIONAL

  • Garlic
  • Onion
  • Fresh herbs
  • Capsicum/peppers

SUGGESTIONS

  • Add some onion rings, fresh herbs, garlic or capsicum to the top before baking
  • If you would like to add more toppings, use a spoon to scoop out some of the squash centre
  • Fry up some bacon/ham with onion and tomato and scoop this into a hollowed out squash half. Top with cheese and grill for a tasty way to get kids to eat vegetables.
  • Instead of cheese and tomato on toast, substitute squash or another vegetable for more vitamins and a great weight loss alternative
