Tomato Parmesan Squash
At the farmers markets you can usually find some inspiring vegetables, and recipes can seem to create themselves. This recipe idea is a very easy way to turn a simple, nutritious vegetable into a creative side dish without over processing it or drowing it in butter.
INGREDIENTS
- 4 Large yellow Button Squash
- 1 large tomato (try to match the tomato size with the width of the squash if possible)
- Olive Oil
- 30-50 grams of Parmesan Cheese
- Salt & Pepper
OPTIONAL
- Garlic
- Onion
- Fresh herbs
- Capsicum/peppers
- Bacon/Ham
METHOD
- Thoroughly wash squash and tomato
- Slice whole squash in half so you have a top and a bottom
- If the squash don't sit flat with the cut side up, slice a little off their bottoms to make them flat.
- Slice tomato
- Grate Parmesan
- Place squash flat onto a baking tray, lay slices of tomato on top and sprinkle with Parmesan and salt/pepper to taste
- Bake in a medium oven for 20 minutes (until squash are cooked) then on a high oven for 5 minutes (or under a grill)
- Serve with your favourite meal or as a tasty lunch or snack

SUGGESTIONS
- Add some onion rings, fresh herbs, garlic or capsicum to the top before baking
- If you would like to add more toppings, use a spoon to scoop out some of the squash centre
- Fry up some bacon/ham with onion and tomato and scoop this into a hollowed out squash half. Top with cheese and grill for a tasty way to get kids to eat vegetables.
- Instead of cheese and tomato on toast, substitute squash or another vegetable for more vitamins and a great weight loss alternative
