Toad in the Hole
I have absolutely no idea why this dish is so called but remember having it often as a child, an inexpensive main meal served with veges
Ingredients
- 500 gm thin pork sausages
- 1 1/2 cups S.R flour
- 2 teaspoons curry powder
- 2 eggs
- 1 dessertspoon tomato sauce
- 1/2 cup evaporated milk made up to 1/2 pint with water
- thin slices of bacon
Method
- Boil sausages, drain
- Beat eggs, milk and water, sauce
- Add to flour and mix well
- Place sausages in casserole dish
- Pour batter over
- Arrange bacon over top
- Bake in moderate oven 45 minutes or till skewer comes out clean
- Serve with vegetables
