Toad in the Hole

I have absolutely no idea why this dish is so called but remember having it often as a child, an inexpensive main meal served with veges

Ingredients

  • 500 gm thin pork sausages
  • 1 1/2 cups S.R flour
  • 2 teaspoons curry powder
  • 2 eggs
  • 1  dessertspoon tomato sauce
  • 1/2 cup evaporated milk made up to 1/2 pint with water
  • thin slices of bacon

Method

  • Boil sausages, drain
  • Beat eggs, milk and water, sauce
  • Add to flour and mix well
  • Place sausages in  casserole dish
  • Pour batter over
  • Arrange bacon over top
  • Bake in moderate oven 45 minutes or till skewer comes out clean
  • Serve with vegetables
