Sunflower Seed Slice
I have been experimenting with snacks which are low in sugar, contain natural chocolate but are also packed with nutritious seeds, nuts and fruits. I thought I'd give this one a go, based on sunflower seeds as they are so inexpensive, and I enjoyed the result very much ... 5 days in a row!
Ingredients
- 1/2 cup cocoa powder
- 1 cup finely chopped dates
- 1/2 cup sultanas
- 1 cup sunflower seeds
- 2 tablespoons of honey
- 2 tablespoons of golden syrup
- 100 grams of butter (olive oil for dairy free)
- Optional: 1/2 cup of cherries, raisins, dried fruit, coconut, cashews, macadamia nuts etc
- Adults: Add a touch of brandy or rum
Method
- Melt butter and stir in golden syrup and honey.
- Add sunflower seeds, sultanas, chopped dates, cocoa and other ingredients into a bowl and stir until all combined
- Press firmly into a 20cm square or rectangular baking tray
- Bake for 15 minutes in a medium oven
- Refrigerate for 2 hours then cut up into slices
