Sunflower Seed Slice

I have been experimenting with snacks which are low in sugar, contain natural chocolate but are also packed with nutritious seeds, nuts and fruits. I thought I'd give this one a go, based on sunflower seeds as they are so inexpensive, and I enjoyed the result very much ... 5 days in a row!

Ingredients

  • 1/2 cup cocoa powder
  • 1 cup finely chopped dates
  • 1/2 cup sultanas
  • 1 cup sunflower seeds
  • 2 tablespoons of honey
  • 2 tablespoons of golden syrup
  • 100 grams of butter (olive oil for dairy free)
  • Optional: 1/2 cup of cherries, raisins, dried fruit, coconut, cashews, macadamia nuts etc
  • Adults: Add a touch of brandy or rum

Method

  1. Melt butter and stir in golden syrup and honey. 
  2. Add sunflower seeds, sultanas, chopped dates, cocoa and other ingredients into a bowl and stir until all combined
  3. Press firmly into a 20cm square or rectangular baking tray
  4. Bake for 15 minutes in a medium oven
  5. Refrigerate for 2 hours then cut up into slices
