Sour Cream Crackers

These are great crackers to serve with a good Blue or Camembert.

Ingredients

  • 1 3/4 cup Plain flour
  • 1/4 cup S.R. flour
  • 1/2 teaspoon salt
  • 30gm butter
  • 1/2 cup sour cream
  • 1/4 cup water

Method

  • Sift flours and salt together
  • Rub in butter till crumbly
  • Add sour cream and water, mix carefully till combined
  • Knead lightly on floured board
  • Divide into 4 pieces
  • Roll out till fairly thin
  • Add desired topping and roll into pastry so it is embedded
  • Lightly brush with milk, prick with fork to prevent bubbles
  • Bake in moderate oven till golden
  • when cold break into pieces and store in airtight jars

Toppings

  • Dill or Fennel or very finely chopped rosemary
  • Paprika,Curry or other spices
  • Parmesan cheese
  • Poppy seeds
  • Other toppings of your choice
