Savoury Rice
This is a delicious rice dish that can be adapted to your own taste.
Ingredients
- 1 cup rice
- 3 cups cold water
- your choice of vegetables eg; carrot, eggplant, onion, pumpkin, celery, sweet potato, zuccini, capsicum, cauliflower, broccoli
Method
- finely dice all vegetables and saute in a pan till tender
- Cook rice in water for 18 minutes in a microwave
- Add rice to vegetables and carefully mix with a fork
- Serve immediately
- Non vegetarians can enjoy this dish as a side with any kind of meat
