Raspberry Bread and Butter Pudding

It was a dessert invented in a time when every piece of food was precious so Bread and Butter Pudding isn't often given much cred, but it can be given a gourmet spin... and isn't it good to use up all the food that we buy rather than throwing so much away? Mmmm ... enjoy Nan's bread and butter pudding!

INGREDIENTS

  • 3 cups milk
  • 300ml cream
  • ½ cup sugar
  • 2 teaspoons vanilla essence
  • 10 slices white bread or fruit loaf
  • 60gm butter
  • 1 cup raspberries
  • 5 eggs
  • 1/3 cup flaked almonds

METHOD

  1. combine cream, milk, sugar in saucepan
  2. dissolve sugar then boil
  3. gradually add milk to  beaten eggs
  4. butter one side of each piece of bread\
  5. cut into 4
  6. place into pyrex baking dish
  7. arrange raspberries over
  8. pour over custard mix
  9. bake in 180-330C for 45 minutes
  10. have baking dish in water bath to prevent burning
