Raspberry Bread and Butter Pudding
It was a dessert invented in a time when every piece of food was precious so Bread and Butter Pudding isn't often given much cred, but it can be given a gourmet spin... and isn't it good to use up all the food that we buy rather than throwing so much away? Mmmm ... enjoy Nan's bread and butter pudding!
INGREDIENTS
- 3 cups milk
- 300ml cream
- ½ cup sugar
- 2 teaspoons vanilla essence
- 10 slices white bread or fruit loaf
- 60gm butter
- 1 cup raspberries
- 5 eggs
- 1/3 cup flaked almonds
METHOD
- combine cream, milk, sugar in saucepan
- dissolve sugar then boil
- gradually add milk to beaten eggs
- butter one side of each piece of bread\
- cut into 4
- place into pyrex baking dish
- arrange raspberries over
- pour over custard mix
- bake in 180-330C for 45 minutes
- have baking dish in water bath to prevent burning
