Prawns, Beans and Broccolini

A delicious and healthy stir fry made with berlotti beans, medium green prawns and broccolini with a hint of mococcan spice mix, served with sweet potato crisps.

Ingredients

  • 1/2 kg green prawns
  • 1 bunch broccolini
  • 1 x medium purple/white sweet potato
  • 1 can beans (berlotti beans, soy beans, butter beans or chick peas will work)
  • Moroccon spice mix
  • Chopped/minced garlic to taste (1 teaspoon for mild, 5 for strong)
  • Garlic whole egg mayonnaise

Method

  • Slice stalks of broccolini into pieces ready to stir fry, leaving heads long
  • Wash, then slice sweet potato along the length thinly to create chips
  • Toss sweet potatoes with some olive oil and bake on high for 30 minutes
  • Heat some olive oil in a hot pan and drop in some chopped garlic and broccolini stalks
  • Add beans, then drop in the prawns when the pan is really hot
  • Cook for about 30 seconds on each side or until the prawns have just turned white
  • Add broccolini heads, toss quickly then remove from heat to avoid overcooking the prawns
  • Serve with a garlic whole egg mayonaisse
