Polenta with Parmesan and Pancetta

This recipe is just a slight modification of our basic polenta recipe and has the addition of pancetta and green beans to create a more substantial flavour and to add nutrients.

Ingredients

  • 800ml water
  • 2 cups of polenta
  • 50 grams butter
  • 70 grams parmesan cheese
  • 1/2 cup green beans (frozen or fresh)
  • Salt, pepper or spices to taste
  • 70 grams pancetta (half finely chopped and half sliced)

 

Polenta, Parmesan and Pancetta

 

Method

  • Bring water to boil in saucepan
  • Stir in polenta and reduce heat to simmer for about 5 minutes
  • Whisk, beat or blend (for best results use a blender wand while cooking) for a few minutes
  • Add butter and parmesan, mix until smooth
  • Add salt, pepper and spices
  • Turn off heat and stir through pancetta
  • Spoon mixture into a flat baking dish 
  • Lay slices of pancetta over the top of the polenta mixture
  • Bake in a high oven for 20 minutes until golden and slightly crispy on top
