Polenta with Parmesan and Pancetta
This recipe is just a slight modification of our basic polenta recipe and has the addition of pancetta and green beans to create a more substantial flavour and to add nutrients.
Ingredients
- 800ml water
- 2 cups of polenta
- 50 grams butter
- 70 grams parmesan cheese
- 1/2 cup green beans (frozen or fresh)
- Salt, pepper or spices to taste
- 70 grams pancetta (half finely chopped and half sliced)

Method
- Bring water to boil in saucepan
- Stir in polenta and reduce heat to simmer for about 5 minutes
- Whisk, beat or blend (for best results use a blender wand while cooking) for a few minutes
- Add butter and parmesan, mix until smooth
- Add salt, pepper and spices
- Turn off heat and stir through pancetta
- Spoon mixture into a flat baking dish
- Lay slices of pancetta over the top of the polenta mixture
- Bake in a high oven for 20 minutes until golden and slightly crispy on top
