Polenta & Chicken Bake
A basic polenta mix lines the bottom of this bake, soaking up the rich tomato sauce and juices from the chicken drumsticks.
Serves 2 - 4
Ingredients
- 1 cup polenta (prepare as per basic polenta recipe)
- 4 x free range chicken drumsticks
- 1 x onion
- 3 x cloves garlic
- 50g grated cheese
- 1 400g can mixed beans
- 1 x 400g can diced tomatoes
- Sliced cherry tomatoes
- 1 x teaspoon tomato paste
- Handful of basil
- Cajun spice mix

Method
- Prepare polenta as per basic polenta recipe
- Pour warm polenta into a baking dish, sprinkle with cajun spice mix, basil and sliced cherry tomatoes.
- Allow to rest for 30 minutes until top of polenta is firm
- Brown chicken drumsticks with onion and garlic in a pan
- Add tinned beans and tomato with a teaspoon of cajun spice mix to pan and simmer for about 15 minutes
- Pour over polenta in baking dish, sprinkle with cheese
- Put lid on baking dish then bake for 30 minutes.
- Remove lid and bake for another 10 minutes.
- Serve with fresh basil
