Polenta & Chicken Bake

A basic polenta mix lines the bottom of this bake, soaking up the rich tomato sauce and juices from the chicken drumsticks.

Serves 2 - 4

Ingredients

  • 1 cup polenta (prepare as per basic polenta recipe)
  • 4 x free range chicken drumsticks
  • 1 x onion
  • 3 x cloves garlic
  • 50g grated cheese
  • 1 400g can mixed beans
  • 1 x 400g can diced tomatoes
  • Sliced cherry tomatoes
  • 1 x teaspoon tomato paste
  • Handful of basil
  • Cajun spice mix

 

Polenta Chicken Bake

 

Method

  • Prepare polenta as per basic polenta recipe
  • Pour warm polenta into a baking dish, sprinkle with cajun spice mix, basil and sliced cherry tomatoes.
  • Allow to rest for 30 minutes until top of polenta is firm
  • Brown chicken drumsticks with onion and garlic in a pan
  • Add tinned beans and tomato with a teaspoon of cajun spice mix to pan and simmer for about 15 minutes
  • Pour over polenta in baking dish, sprinkle with cheese
  • Put lid on baking dish then bake for 30 minutes.
  • Remove lid and bake for another 10 minutes.
  • Serve with fresh basil
