Pineapple Fruit Cake

This is a delicious fruit cake, I have been making it for over 30 years

Ingredients

  • 1 425gm can crushed pineapple -including juice
  • 4 ozs butter
  • 1 cup castor sugar
  • 1 pound dried mixed fruit
  • 1 teaspoon spice
  • 1 teaspoon bi carb soda
  • 1 cup S.R flour
  • 1 cup Plain flour
  • 2 beaten eggs

Method

  • Place pineapple, sugar, butter,fruit, spices and soda in saucepan
  • Bring to boil then simmer for 3 minutes
  • Add flours and eggs mix well
  • Pour into well greased and lined 20cm round cake tin
  • Bake in moderate oven 11/2 to 2 hours or till skewer comes out clean
  • Cool before storing
  • This cake freezes well
