Pineapple Fruit Cake
This is a delicious fruit cake, I have been making it for over 30 years
Ingredients
- 1 425gm can crushed pineapple -including juice
- 4 ozs butter
- 1 cup castor sugar
- 1 pound dried mixed fruit
- 1 teaspoon spice
- 1 teaspoon bi carb soda
- 1 cup S.R flour
- 1 cup Plain flour
- 2 beaten eggs
Method
- Place pineapple, sugar, butter,fruit, spices and soda in saucepan
- Bring to boil then simmer for 3 minutes
- Add flours and eggs mix well
- Pour into well greased and lined 20cm round cake tin
- Bake in moderate oven 11/2 to 2 hours or till skewer comes out clean
- Cool before storing
- This cake freezes well
