Mum's Light Fruit Cake

I have many fond memories of growing up on a farm and weekends were for baking, Mum used to give us free reign as long as we baked Dad's favourite fruit cake.  He used to cut off one whole slice of an 8inch cake and eat it while walking down the paddock to get the cows , rain, hail or shine, summer or winter.

Ingredients

  • 8 ozs butter
  • 8 ozs sugar
  • 12ozs Plain flour
  • 1 teaspoon cornflour
  • 3 eggs
  • 8 ozs dried mixed fruit
  • 1 teaspoon bakng owder
  • 3/4 cup milk
  • vanilla and lemon essence

Method

  • Cream butter and sugar till light and fluffy
  • add eggs and beat well
  • add sifted flours alternately with milk
  • add fruit and essences
  • bake in 8 inch (20cm) round or square well greased and lined tin
  • moderate oven 1 1/2 hours or till skewer comes out clean

Hint: dust fruit with some of the flour before mixing into batter, will stop the fruit from sticking
