Mix and Match Marmalade
This was an interesting day, our neighbours have a cumquat tree and told us to take the fruit when it was ready so we thought yum cumquat marmalade, problem was there was only 400gms of fruit and we needed 2 cups, what to do. We have a fruit tree in our backyard which had some fruit on it which we thought were grapefruit, but they turned out to be oranges,so were in luck. I guess you could use any fruit but we went with what we had. If you have lots of the fruit double the quantities. I thought that I could have added some chopped glace ginger as well, will try it next time
Ingredients
- 2 cups cumquats or citrus fruit or mixture of
- 2 cups water
- juice of one lemon
- 2 cups sugar
Method
- Wash and slice fruit finely ( we left ours a bit chunky)
- Remove seeds and keep aside
- Place fruit in large saucepan and cover with the water, soak over night or for at least 8 hours
- place seeds in a container and cover with a small amount of boiling water, leave overnight
- Strain the liquid from the seeds it will be thick
- Put liquid from seeds in with the fruit.
- Cook gently on low heat till the fruit is tender and liquid reduced by half
- Add sugar and lemon juice, turn up heat and boil rapiocly till the mixture jells, around 40 minutes
- stir often or mixture will stick
- to test marmalade, place a little onto a cold saucer, if a skin forms and it glazes on the surface and wrinkles to the touch it is ready
- if it is still runny keep cooking and repeat test till it is done
- carefully pour into sterilized jars and seal immediately
- spread on toast or crackers, yum delicious
