Maureens Prune Pudding

This recipe I found in my mother in laws cook book, you can subsitute half raisins or sultanas instead of the prunes, also makes a lovely cake

Ingredients

  • 1/2 lb prunes
  • 2 ozs butter
  • 4 ozs sugar
  • 6 ozs S.R.flour
  • nutmeg, pinch
  • 2 eggs
  • 1/2 gill (75ml ) milk

Method

  • Cut prunes in half and remove stones
  • Cream butter and sugar till smooth then add beaten eggs
  • Add milk, prunes,nutmeg and stir in the sifted flour
  • Place in a greased pudding basin, leaving room for expansion
  • Cover with greased paper and steam for 1 1/2 hours
  • Serve with custard
