Maureens Prune Pudding
This recipe I found in my mother in laws cook book, you can subsitute half raisins or sultanas instead of the prunes, also makes a lovely cake
Ingredients
- 1/2 lb prunes
- 2 ozs butter
- 4 ozs sugar
- 6 ozs S.R.flour
- nutmeg, pinch
- 2 eggs
- 1/2 gill (75ml ) milk
Method
- Cut prunes in half and remove stones
- Cream butter and sugar till smooth then add beaten eggs
- Add milk, prunes,nutmeg and stir in the sifted flour
- Place in a greased pudding basin, leaving room for expansion
- Cover with greased paper and steam for 1 1/2 hours
- Serve with custard
