Marshmallow Squares
This delicious slice can be whipped up fairly quickly, you can add a drop or two of food colouring to the marshmallow if you like
Ingredients for Base
- 1 cup coconut
- 1/2 cup sugar
- 1 cup S.R flour
- 1 cup cornflakes
- 1/2 cup melted butter
Marshmallow
- 1 cup sugar
- 1 cup water
- 2 teaspoons lemon juice
- 1 tablespoon gelatine
Method Base
- Combine all ingredients in bowl then press into greased slab tin
- Bake for 20 minutes in a moderate oven
- Cool
Marshmallow
- Combine all ingredients in a saucepan, stir till boiling, then boil 5 minutes
- COOL
- Beat till thick then pour over cooled base
- Refrigerate till set
- Cut into squares
