Mango Vinegarette

This is a delicious vinegarette to serve over salads. Try cutting a mango in half, scoring  across both ways then inverting so you have cubes of mango still attached to the skin, top with fresh crab meat then this mango Vinegarette, absolutely beautiful, a real summer special

Ingredients

  • 100 ml vinegar
  • 350 ml good vegetable oil
  • 2 large mangoes peeled and chopped
  • salt and pepper to taste
  • chopped dill

Method

  • combine in a blender or hand held stick blender till all combined
  • adjust seasonings to taste
  • keep refrigerated
