Lemon Meringue Pie
Doesnt this take you back to your childhood? Mum used to make the most divine pie, we used to stand and watch to make sure the meringue didnt burn,
Ingredients
- 2 tablespoons cornflour
- 1/4 cup castor sugar
- 1/4 pint water
- 1 lemon, need rind and juice
- 2 egg yolks
- 2 egg whites
- 1/2 cup castor sugar extra
Method
- Place cornflour and sugar in saucepan, stir in water slowly and mix well
- add finely chopped lemon rind
- draw off heat and add egg yolks and lemon juice
- beat well
- pour into baked pie shell ( recipe for sweet pie shell in dessert section)
- beat egg whites and sugar till stiff
- spoon over pie
- place under grill and lightly brown, careful , dont let it burn
