Lemon Delicious Pudding

Another one of Mum's yummy wintery puddings.  Growing up on a farm in a cool climate made eating all this food so easy!

Ingredients

  • 1 cup castor sugar
  • 1/2 cup flour
  • 3 eggs separated
  • 1 1/2 cups milk
  • zest of one lemon
  • 1/2 cup lemon juice
  • 4 tablespoon melted cooled butter
  • icing sugar
  • cream to serve

Method

  • Sift flour, add sugar, make well in centre
  • pour in zest and juice, melted butter and lightly beaten egg yolks
  • beat well then slowly add milk, keep mixing
  • beat egg whites till stiff, slowly add to batter mixture and fold in carefully
  • dont overbeat, mixture may look curdly but thats how it should be
  • pour into greased 1.5 litre oven proof dish, stand in a large dish of cold water
  • bake in 180 degree oven about one hour or till golden and puffy
  • serve with cream
