Lemon Delicious Pudding
Another one of Mum's yummy wintery puddings. Growing up on a farm in a cool climate made eating all this food so easy!
Ingredients
- 1 cup castor sugar
- 1/2 cup flour
- 3 eggs separated
- 1 1/2 cups milk
- zest of one lemon
- 1/2 cup lemon juice
- 4 tablespoon melted cooled butter
- icing sugar
- cream to serve
Method
- Sift flour, add sugar, make well in centre
- pour in zest and juice, melted butter and lightly beaten egg yolks
- beat well then slowly add milk, keep mixing
- beat egg whites till stiff, slowly add to batter mixture and fold in carefully
- dont overbeat, mixture may look curdly but thats how it should be
- pour into greased 1.5 litre oven proof dish, stand in a large dish of cold water
- bake in 180 degree oven about one hour or till golden and puffy
- serve with cream
