Jam Drops

A lovely light biscuit, use any jam you like.

Ingredients

  • 4 ozs butter
  • 3/4 cup sugar
  • 1 1/2 cups S.R.flour
  • 1 egg, beaten
  • vanilla essence
  • jam

Method

  • Cream butter and sugar till light and fluffy
  • Add egg, vanilla essence and four
  • Small spoonfuls onto greased tray
  • Put a small dollop of jam into the centre, not too much as it will run over the edge and burn
  • Bake in moderate oven till golden 10 to 15 minutes
