Honeycomb Chocolate Crumble

I've never thought it would be possible to make this at home so easily, but I saw a demonstration on a cooking show recently and just had to try it for myself. This is my first attempt, so the recipe may be improved over time. For now, this one was pretty delicious!

Ingredients

  • 2/3 cup honey
  • 3 tablespoons of golden syrup
  • 1 1/2 cups of sugar
  • 1/2 cup water
  • 3 level teaspoons of bi-carb soda
  • 250 grams milk chocolate melts

 

Method

  • Simmer honey, syrup, sugar and water for about 5 minutes or until sugar is dissolved, stirring occasionally.
  • Bring ingredients to a light boil, without stirring, for about 5 minutes or until mixture has thickened so that it doesn't drip easily
  • Turn off heat, allow bubbles to subside. This will take about 5 minutes
  • Prepare a tray by lining with baking paper
  • Now get ready, you have to do this step FAST!
  • Add the bi-carb soda to the toffee mixture and stir with a wooden spoon, folding all the bi-carb through the toffee evenly.
  • It will start to swell up, stir for about 20 seconds then pour evenly into the tray lined with baking paper.
  • Scrape as much out of the saucepan as you can before it sets
  • Tap the tray so the honeycomb mixture goes into all corners of the tray
  • Allow to cool
  • Melt chocolate over a water bath (in a stainless steel bowl over a saucepan with a bit of water)
  • Pour over the top of the honeycomb and place tray in fridge to set for several hours.
  • Take out of the fridge and tray, remove baking paper.
  • Use a large knife to start cutting sections - they should break into pieces if you put knife pressure around the edges on an angle. 
  • That's it! Enjoy your home made honeycomb!
