Hearty Beef and Spud Casserole
Theres nothing like a good hearty meal in the cold of winter. You can use half potato and gold sweet potato or pumpkin in this recipe. Serve with green beans or peas. Leftovers ( if there are any) can be eaten next day.
Ingredients
Burgers
- 500 gm mince steak
- 1 onion, finely chopped
- 1 egg
- 1/3 cup breadcrumbs
- 1 tablespoon soy sauce
- 1 tablespoon steak sauce
- salt and pepper to taste
- 2 tablespoons oil
Sauce
- 1 onion sliced
- 2 tablespoons plain flour
- 1 1/2 cups water
- 440 gm can whole peeled tomatoes
- salt and pepper
- 2 tablespoons tomato paste
Topping
- 750 gm potatoes, ( or half sweet potato or pumpkin)
- 30 gm butter
- 1/3 cup milk
- salt and pepper
- 60 gm tasty cheese
Method
Burgers
- Combine all ingredients and mix well
- Shape mixture into 8 burgers
- Heat oil in large pan and cook burgers on both sides till well browned
- Remove from pan and reserve juices
Sauce
- Add onion to pan and saute till transparent, remove from pan
- Add flour to pan and stir till smooth and well browned
- Gradually add water and undrained mashed tomaoes
- Stir till sauce boils and thickens
- Reduce heat and add tomato paste and season with salt and pepper
- Return onion to pan and simmer uncovered 5 minutes
Potato Topping
- Peel potatoes ( and sweet potato or pumpkin)
- Cook in boiling salted water till tender.
- Drain and mash with butter, milk and salt and pepper
Place burgers into large casserole dish, pour sauce over, spread over potato mixture then sprinkle cheese on top. Bake in a moderate oven for 35 to 40 minutes or till potato is golden brown
