Guacamole

This is a recipe I have been using and adapting since I was about 16 when I read it in Dolly magazine. It was provided by a model called Alison Brahe who is married to Aussie actor Cameron Daddo, and the first time I made it for a family BBQ it became an instant hit.

Anyone can make this, and it's a great way to get kids involved in cooking. It's healthy, with Avocado providing essential oils and Garlic working as a blood cleaner. It can be served with Mexican dinners like taco's or burritos, and it makes an excellent breakfast spread on toast.

Ingredients

  • 3 large Avocados
  • 1 small red onion
  • ¼ of a lemon
  • 1 small tomato
  • 2 cloves of garlic
  • Rock Salt and Cracked Pepper
  • Tabasco Sauce
  • 10 coriander (cilantro) leaves

Method

Some people like their Guacamole chunky, like salsa, while others prefer it smooth and spreadable. I generally go for a chunky version as I love the crunchy onion on toast or crackers.

Crunchy: Dice all ingredients and mix them in a large bowl. Cover the Avocado with Lemon as soon as possible to prevent it from going brown and to give that 'zing' to the flavour.

Smooth: Chop all ingredients and place in a blender or food processor until pureed to the consistency you like
