Green Bean Salad or Side

INGREDIENTS

  • 250 grams of fresh green beans
  • 1 x medium brown onion
  • Cherry tomatoes
  • Spoonful of pesto
  • Olive Oil

OPTIONAL

  • 2 x bacon rashers
  • Red (or salad) onion
  • Tuna or salmon
  • Roast beef strips
  • Hard boiled egg
  • White or black beans for contrast

METHOD

  1. Top and tail fresh, crisp, green beans and cut into 1 inch pieces
  2. Slice or dice the onion and cut the cherry tomatoes into halves or quarters
  3. Heat a pan with olive oil then toss in onions until brown
  4. Add green beans, cherry tomatoes and pesto to the sizzling pan, then cook for no more than a few minutes until the beans are a bright green colour
  5. Serve on its own or with rice noodles - hot, warm or room temperature

I love this dish for lunch as I can expand it with anything that is in the fridge or pantry. It is completely gluten free, dairy free and free of most other common allergy ingredients - except there are pine nuts and peanuts in the pesto.
