Green Bean Salad or Side
INGREDIENTS
- 250 grams of fresh green beans
- 1 x medium brown onion
- Cherry tomatoes
- Spoonful of pesto
- Olive Oil
OPTIONAL
- 2 x bacon rashers
- Red (or salad) onion
- Tuna or salmon
- Roast beef strips
- Hard boiled egg
- White or black beans for contrast
METHOD
- Top and tail fresh, crisp, green beans and cut into 1 inch pieces
- Slice or dice the onion and cut the cherry tomatoes into halves or quarters
- Heat a pan with olive oil then toss in onions until brown
- Add green beans, cherry tomatoes and pesto to the sizzling pan, then cook for no more than a few minutes until the beans are a bright green colour
- Serve on its own or with rice noodles - hot, warm or room temperature
I love this dish for lunch as I can expand it with anything that is in the fridge or pantry. It is completely gluten free, dairy free and free of most other common allergy ingredients - except there are pine nuts and peanuts in the pesto.
