Ginger and Fig Biscuits

Figs are a great source of fibre and taste great, you can use raisins if you prefer

Ingredients

Dry Mix

  • 1 cup oats
  • 1 cup plain flour
  • 1 cup coconut
  • 190 gm figs, finely chopped
  • 3/4 cup castor sugar
  • 1/3 cup glace ginger finely chopped

Wet Mix

  • 125gm butter
  • 2 tablespoons golden syrup
  • 2 tablespoons water

Method

  • Mix all dry ingredients together in a bowl
  • put wet mix ingredients in a small pan
  • stir over low heat till dissolved
  • add to dry ingredients and mix well
  • place small balls onto greased tray
  • bake on moderate hot oven for 12 minutes or till golden
