Ginger and Fig Biscuits
Figs are a great source of fibre and taste great, you can use raisins if you prefer
Ingredients
Dry Mix
- 1 cup oats
- 1 cup plain flour
- 1 cup coconut
- 190 gm figs, finely chopped
- 3/4 cup castor sugar
- 1/3 cup glace ginger finely chopped
Wet Mix
- 125gm butter
- 2 tablespoons golden syrup
- 2 tablespoons water
Method
- Mix all dry ingredients together in a bowl
- put wet mix ingredients in a small pan
- stir over low heat till dissolved
- add to dry ingredients and mix well
- place small balls onto greased tray
- bake on moderate hot oven for 12 minutes or till golden
