Fruit Mince Filling
A fruit mince tart of some kind was on every Christmas buffet that I remember, my Nana and my Mum making a delicious fruit mince filling that can be used in any kind of pie crust. Make your own or buy pre-made shells for a cheating shortcut. Gluten free pie crusts are also available or make your own recipe from scratch using gluten free flours.
INGREDIENTS FOR FRUIT MINCE
- 15 oz can crushed pineapple
- 1 cup each sultana & raisins
- ¼ cup currants
- 2 oz glace cherries
- 1 tblspn mixed peel
- 1 peeled & grated apple
- ¼ cup brown sugar
- 1 tbspn grated lemon rind
- ½ tspn cinnamon
- ½ tspn nutmeg
- 1 tblspn cornflour
- ¼ cup brandy
METHOD
- Combine all ingredients except cornflour & brandy in saucepan
- Stir over medium heat till mixture boils
- reduce heat, simmer 3 minutes
- blend cornflour with brandy
- mix into hot fruit mixture
- stir till mixture boils & thickens
- Cool before use
