Fruit Mince Filling

A fruit mince tart of some kind was on every Christmas buffet that I remember, my Nana and my Mum making a delicious fruit mince filling that can be used in any kind of pie crust. Make your own or buy pre-made shells for a cheating shortcut. Gluten free pie crusts are also available or make your own recipe from scratch using gluten free flours.

INGREDIENTS FOR FRUIT MINCE

  • 15 oz can crushed pineapple
  • 1 cup each sultana & raisins
  • ¼ cup currants
  • 2 oz glace cherries
  • 1 tblspn mixed peel
  • 1 peeled & grated apple
  • ¼ cup brown sugar
  • 1 tbspn grated lemon rind
  • ½ tspn cinnamon
  • ½ tspn nutmeg
  • 1 tblspn cornflour
  • ¼ cup brandy

METHOD

  1. Combine all ingredients except cornflour & brandy in saucepan
  2. Stir over medium heat till mixture boils
  3. reduce heat, simmer 3 minutes
  4. blend cornflour with brandy
  5. mix into hot fruit mixture
  6. stir till mixture boils & thickens
  7. Cool before use
