Fried Rice

A delicious accompaniment to many different meals

Ingredients

  • 2 cups brown rice
  • 2 eggs
  • salt and pepper
  • 3 tablespoon oil
  • 2 rashers bacon
  • 125gm shrimps
  • 2 tablespoon sherry
  • 2 tablespoons shallots

Method

  • Boil rice till tender, drain, cool and refrigerate overnight in large flat tray
  • Beat eggs with salt and pepper
  • Heat 1 tablespoon of the oil
  • Cook egg till set, cut into strips
  • Heat remaining oil and fry bacon and shallots 3 minutes
  • Add rice and cook 10 minutes
  • Add other ingredients and cook further 3 minutes
  • Serve hot or cold
