Fried Rice
A delicious accompaniment to many different meals
Ingredients
- 2 cups brown rice
- 2 eggs
- salt and pepper
- 3 tablespoon oil
- 2 rashers bacon
- 125gm shrimps
- 2 tablespoon sherry
- 2 tablespoons shallots
Method
- Boil rice till tender, drain, cool and refrigerate overnight in large flat tray
- Beat eggs with salt and pepper
- Heat 1 tablespoon of the oil
- Cook egg till set, cut into strips
- Heat remaining oil and fry bacon and shallots 3 minutes
- Add rice and cook 10 minutes
- Add other ingredients and cook further 3 minutes
- Serve hot or cold
