Fish Tofu Stirfry

Some nights I don't feel like more than a green vegetable stir fry, but I do love to keep some fish tofu in the fridge as a naughty MSG filled flavour burst for those green vegetable nights.

Ingredients

  • 1 large head of broccoli
  • 1 x packet of fish tofu (from asian supermarket)
  • 1 large handful of beans
  • 1 x large zucchini
  • 1 x medium red onion, chopped into large pieces
  • 3 x cloves of garlic
  • 2 x tablespoons olive oil

 

Method

  • Stirfry chopped red onion, finely chopped garlic and fish tofu in a hot pan, preheated with olive oil
  • Add zucchini and cook for around 5 minutes
  • Add broccoli and beans and stir regularly for around 5 minutes
  • Serve as is for a tasty, low calourie lunch or dinner meal
