Egg and Bacon Pie

This is a dish which can be placed in a number of categories.  I chose Sides as it will go further if served with a green salad or vegetables.  For a vegetarian omit the bacon. Instead of the bacon try finely dicing eggplant or zuccini saute in pan, drain then add to egg mixture. Also chop fresh basil and add to mix, delicious!.  Its easier to use packaged filo pastry, about 5 or 6 sheets is ample. This is a great dish to take on a picnic, you can leave it in the pie shell till you are ready to serve

Ingredients

  • Filo pastry ( as above)
  • 6 or 7 eggs depending on size ( my chooks lay all different sizes so I have to adjust the recipe )
  • 250 ml milk
  • 4 rashers bacon, finely chopped
  • 1 onion finely chopped
  • zucini, eggplant, herbs, cheese---all optional
  • salt and pepper to taste

Method

  • Line pie dish with layers of pastry, brushing each layer with butter
  • saute bacon and onions ( eggplant, zuccini ) drain on paper towel
  • beat eggs, add milk and salt and pepper
  • add bacon and onion, or veges of choice
  • pour carefully into pie shell
  • bake at 175 degrees 40 minutes or till custard is firm but not hard
  • cut in wedges and serve with salad or vegetables
