Easy Chocolate Cake
Chocolate Cakes are an eternal favourite and can be served in so many ways, as a plain cake, cut in half and filled with jam and whipped cream, lightly heated and served with custard and icecream the possibilities are endless. They are the perennial favourite for birthday cakes and rich chocolate cakes are now popular with the younger generation as wedding cakes. This recipe is pretty much fool proof. It also freezes well ( if it lasts that long, you might need to make 2) If you like you can add a handful of chopped walnuts or pecans to the mixture.
Ingredients
- 250 mls water
- 330 gms castor sugar
- 2 tablespoons cocoa powder, sifted
- 125 gm butter, chopped
- 1/2 teaspoon bi carb soda
- 1 1/2 cups SR flour
- 2 eggs, lightly beaten
Method
- Place water, sugar, butter, cocoa and soda in medium pan
- stir over low heat till sugar is dissolved
- bring to boil, then simmer uncovered 5 minutes
- transfer mixture to large bowl, cool 10 minutes
- add sifted flour and eggs
- beat with whisk ( or electric beaters) till smooth
- Pour into a deep, greased and lined 20cm cake tin
- bake in moderate oven 40 minutes or till skewer comes out clean
- cool in tin 10 minutes then turn out onto rack
- ice if desired, or serve any way you like
