Drop Scones

I dont know why these are called Drop Sones unless its because you drop the mixture from the spoon into the pan.  Let the kids have a go at this one, its so easy. You can make them in a flash especially if you have unexpected guests. I first made these as a little girl growing up on a farm in the mid 50's and have been making them ever since. Mum was always so busy helping Dad on the farm that the 4 girls were always allowed to do the baking on a weekend, something we relished ( more than homework I must admit)

Ingredients

  • 1 1/2 cups S.R.flour
  • 4 tablespoons sugar
  • 1 egg
  • 6 ozs milk
  • butter for greasing

Method

  • Mix together flour and sugar
  • Add beaten egg then milk
  • Mix till smooth ,you may need a little extra milk
  • Heat non stick pan to med-high, lightly grease with butter
  • Drop tablespoons of mixture into pan
  • When bubbles appear carefully turn over and cook on other side
  • Lift onto rack to cool
  • Butter and serve
  1. instead of butter, top with jam and whipped cream
  2. add some cinnamon to flour
  3. add sultanas or currants to batter before cooing
