Dill is native to Russia and Southern Europe and grows wild in Britain. It grows up to 1.5 metres tall, and is a hardy annual. Dont grow near fennel or it will cross pollinate. Dill seeds have a warming, strong taste a little like carraway. You can use the seeds to flavour cakes and sweets, also fish, cream sauces, potato salad and other vegetables. Use it to flavour vinegars and pickles. Steep a seed head in 600ml vinegar and strain after 2 weeks. Dill is rich in minerals, potassium, sulphur and sodium. Dill has been mentioned in a 5000 year old Egyptian medical and appears in all old herbals. It is considered a plant of good omen.
