Date Pudding
I love this pudding, you can use half dates and half sultanas, try figs also. Serve with a toffee sauce and cream, yum. If you can resist it can be eaten cold a cake
Ingredients
- 1 cup dates
- 1 1/2 cups water
- 60 gm butter
- 1 teaspoon bi carb soda
- 1/2 cup castor sugar
- 1 teaspoon vanilla
- 2 eggs
- 1 1/2 cups SR flour
Method
- Combine dates, water in pan, bring to boil
- remove from heat
- add soda and stand 15 minutes
- beat butter, sugar and essence till light and fluffy
- add eggs one at a time
- stir in flour and date mixture
- pour into greased and lined 20cm round tin
- bake in moderate oven approx 30 minutes or till skewer comes out clean
- serve as desired
