Date Pudding

I love this pudding, you can use half dates and half sultanas, try figs also.  Serve with a toffee sauce and cream, yum. If you can resist it can be eaten cold a cake

Ingredients

  • 1 cup dates
  • 1 1/2 cups water
  • 60 gm butter
  • 1 teaspoon bi carb soda
  • 1/2 cup castor sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 1/2 cups SR flour

Method

  • Combine dates, water in pan, bring to boil
  • remove from heat
  • add soda and stand 15 minutes
  • beat butter, sugar and essence till light and fluffy
  • add eggs one at a time
  • stir in flour and date mixture
  • pour into greased and lined 20cm round tin
  • bake in moderate oven approx 30 minutes or till skewer comes out clean
  • serve as desired
