Dairy Free Loaf
A delicious loaf which is more like a bread than a cake. It freezes very well. The dried fruit can be a combination of anything you like. I use half and half White SR flour and Wholemeal SR flour
Ingredients
- 375gm mixed dried fruit
- 1 tablespoon sherry
- 150ml strong tea
- 380 gm SR flour
- 125gm sugar
- 1/2 teaspoon mixed spice
- 2 large eggs
Method
- soak fruit in tea and sherry over night
- mix together flour, sugar and spice
- beat eggs then add to fruit
- mix in the wet ingredients to the dry ingredients, stir well
- place in greased and lined loaf tin, level top with spatula
- bake in moderate oven approx one hour, test after 45 minutes
- cool on tray
- serve with butter
