Dairy Free Loaf

A delicious loaf which is more like a bread than a cake.  It freezes very well. The dried fruit can be a combination of anything you like.  I use half and half White SR flour and Wholemeal SR flour

Ingredients

  • 375gm mixed dried fruit
  • 1 tablespoon sherry
  • 150ml strong tea
  • 380 gm SR flour
  • 125gm sugar
  • 1/2 teaspoon mixed spice
  • 2 large eggs

Method

  • soak fruit in tea and sherry over night
  • mix together flour, sugar and spice
  • beat eggs then add to fruit
  • mix in the wet ingredients to the dry ingredients, stir well
  • place in greased and lined loaf tin, level top with spatula
  • bake in moderate oven approx one hour, test after 45 minutes
  • cool on tray
  • serve with butter
