Dairy Free Iced Coffee

This cafe favourite can be made dairy free with just a few basic substitutes but it's important to use a coffee that you really like.

Ingredients

  • 2 teaspoons of instant coffee
  • 1/4 cup of boiling water
  • 2 teaspoons of Sugar or Xylitol
  • 250ml soy or rice milk
  • 1 x scoop of chai soy Ice-Cream

Method

  • Mix up instant coffee with boiling water and sugar so it is a thick coffee mixture. Freeze this for about 20 minutes
  • Pour this mixture into a tall glass and roll it around so the inside of the glass is coated with this mixture
  • Add a scoop of ice-cream to the glass
  • Fill with milk, careful not to wash the mixture from the sides of the glass
  • Top with another small scoop of ice-cream and a sprinkle of coffee

Serve

  • With a coffee chocolate stick and optional dairy free cream on top
  • Sprinkled with coffee powder on top
  • With a long handled spoon
