Dairy Free Iced Coffee
This cafe favourite can be made dairy free with just a few basic substitutes but it's important to use a coffee that you really like.
Ingredients
- 2 teaspoons of instant coffee
- 1/4 cup of boiling water
- 2 teaspoons of Sugar or Xylitol
- 250ml soy or rice milk
- 1 x scoop of chai soy Ice-Cream
Method
- Mix up instant coffee with boiling water and sugar so it is a thick coffee mixture. Freeze this for about 20 minutes
- Pour this mixture into a tall glass and roll it around so the inside of the glass is coated with this mixture
- Add a scoop of ice-cream to the glass
- Fill with milk, careful not to wash the mixture from the sides of the glass
- Top with another small scoop of ice-cream and a sprinkle of coffee
Serve
- With a coffee chocolate stick and optional dairy free cream on top
- Sprinkled with coffee powder on top
- With a long handled spoon
