Currant and Mixed Peel Biscuits
Ingredients
- 125gm butter
- 2/3 cup castor sugar
- 1/4 cup mixed peel
- 1/2 cup currants
- 2 cups S.R. flour
- 1 egg
Method
- Cream butter and sugar till light and fluffy
- Add egg and mix well
- Mix in flour and fruits alternately till well combined
- Small teaspoonfuls on greased trays
- Bake in moderate oven 15 minutes till golden
- Cool then store in airtight jars
