Currant and Mixed Peel Biscuits

Ingredients

  • 125gm butter
  • 2/3 cup castor sugar
  • 1/4 cup mixed peel
  • 1/2 cup currants
  • 2 cups S.R. flour
  • 1 egg

Method

  • Cream butter and sugar till light and fluffy
  • Add egg and mix well
  • Mix in flour and fruits alternately till well combined
  • Small teaspoonfuls on greased trays
  • Bake in moderate oven 15 minutes till golden
  • Cool then store in airtight jars
