Crepes

Crepes are a wonderful dessert and can be filled with anything you like, try sauteing fresh figs, dates and bananas in a pan with a little sugar and water and a dash of butter till fruit is just soft. Place on hot crepe and fold over then top with some of the juice and a scoop of Ice cream, I can taste it already.  Strawberries and other berries can be done the same way

Ingredients

  • 7 ozs Plain flour
  • 8 ozs milk
  • 4 ozs cream
  • 3 eggs
  • 2 tablespoons oil
  • 1 tablespoon sugar
  • 1 pinch salt

Method

  • Mix altogether and rest in fridge at least one hour or over night
  • May need to add a little more milk if mixture is too thick
  • remember you are trying to make a thin crepe not a pancake
  • Cook in lightly greased non stick pan till light golden
  • Serve with filling of your choice
