Coriander, Lime and Baby Spinach Salad
There's nothing better than coming home from the farmers markets and spending the day in the kitchen creating delights from fresh greens like baby spinach and coriander (cilantro). This salad is made almost entirely of ingredients purchased fresh that morning with 3 kinds of mini-tomato to add some colour.
Ingredients
- Handful of coriander leaves
- 2 handfuls of baby spinach per person
- Red onion
- Cherry tomatoes
- Radish
- 2 x hard boiled eggs per person
- Optional: Mushrooms, chilli

Method
- Finely slice radish, red onion and hard boiled eggs
- Rinse and drain coriander and spinach
- Cut tomatoes into quarters
- Toss all ingredients in a large bowl with dressing
- Serve with coriander, chilli or mushrooms on top
Dressing
- 2 tsp lime zest and 6 tsp lime juice
- 3 tbsp olive oil
- 3 tbsp balsamic vinegar
