Coconut Ice
An old fashioned favourite, we used to have a family friend who always made a batch of Coconut Ice for us kids when he came for Xmas lunch.
Ingredients
- 250 gm dessicated coconut
- 500 gm icing sugar mixture
- 1 teaspoon vanilla essence
- 2 egg whites, lightly beaten
- 1/2 teaspoon lemon juice
- 125 gm copha, melted
- pink food colouring
Method
- Grease and then line an 8cm by 26 cm tin, regrease paper
- Sift icing sugar into bowl
- stir in coconut, vanilla, lemon juice, egg whites and copha
- divide mixture in half colour one half of mixture with colouring, be careful add in small doses, mix in well
- press pink half into pan, flatten well
- add white half and press firmly again
- refrigerate till firm then cut into squares
for something a little different try colouring one half green or any colour you fancy
