Chocolate Rice Bubble Slice with Peppermint Icing
We make a lot of homemade chocolates and occasionally we stuff up the chocolate and can't use it for the moulds ... but it still makes a perfect slice!! This slice is a simple combination of ingredients which I had handy, topped with a refreshing white chocolate and peppermint icing.
Ingredients
- 2 cups of ricebubbles
- 1/2 cup of coconut
- 100 grams dark chocolate
- 1/2 cup cocoa
Icing Ingredients
- 100 grams white chocolate
- 50 grams butter
- 1/2 cup of icing sugar
- 2 to 5 drops of peppermint essence
- A decoration such as grated chocolate, sprinkles, edible fairy dust, shredded coconut, or even crushed rice bubbles
Method
- Melt chocolate and butter, beat with a whisk until smooth
- Add other ingredients and mix in a large bowl
- Press into a flat lamington or slice pan or shallow rectangular dish, lined with baking paper, until it is compact and firm. Use a flat spatula to press down all over the surface so it is even.
- Refrigerate for about an hour
- Melt white chocolate and butter, whisk until smooth
- Add icing sugar, mix until smooth
- Spread mixture over the slice
- Top with grated chocolate or your decoration of choice
- Return to fridge for about an hour
- Remove, peel off baking paper and slice into small pieces to serve as a treat or with an afternoon coffee
