Chocolate Mousse

We made this Mousse at our recent Dessert Class and it was a big hit and very easy to make

Ingredients

  • 75gm sugar
  • 75ml water
  • 4 egg yolks
  • 1 heaped teaspoon gelatine
  • 25ml extra water
  • 400ml fresh cream
  • 125gm chocolate

Method

  • sprinkle gelatine over 75ml water in small bowl
  • place over pan of hot water till dissolved, cool
  • melt chocolate carefully in small pan over bowl of hot water till melted
  • boil sugar and 25ml water in pan
  • pour over the egg yolks in a medium bowl
  • place over saucepan of water and continue whisking
  • gently heat till mixture becomes like thick cream
  • add chocolate and whisk thoroughly
  • add the gelatine then remove from heat and continue whisking till cold
  • whip the cream and carefully fold into mixture
  • place into individual dishes and refrigerate till set
  • you can also pipe into chocolate baskets
