Chocolate Latte Cupcakes
This delicious treat has a chocolate chip, coffee cupcake topped with coffee creme cheese frosting and is sure to satisfy a true coffee lover.
Ingredients
- 100 grams of butter
- 75 grams of creme cheese
- 150 grams SR flour (substitute gluten free SR flour mix)
- 150 grams sugar
- 1/4 cup dark chocolate chips
- 1/4 cup of cocoa powder
- 2 x eggs
- 2 x teaspoons coffee liqueur
- 1 x teaspoon of coffee powder
- Splash of milk
Method
- Whisk room temperature butter and creme cheese so its fluffy and creamy. Add sugar and coffee liqueur, then whisk until dissolved.
- Add eggs and continue to whisk until mixed.
- Sift in flour and cocoa powder then stir in chocolate chips and coffee powder.
- Spoon into cupcake papers in a muffin tin, about 1/2 to 3/4 full
- Bake for 25 minutes in a medium oven
Frosting Ingredients
- 50 grams melted, room temperature dark chocolate
- 50 grams melted, room temperature white chocolate
- 100 grams creme cheese
- 100 grams icing sugar
- 1 tsp coffee liqueur
- 1 tsp coffee powder (preferably ground fresh beans)
Frosting Method
- Melt chocolate, cool to room temperature
- Whisk creme cheese till fluffy, add in melted chocolate
- Stir in icing sugar, coffee liqueur and ground coffee
- Pipe onto cupcakes using a piping bag and star shaped nozzle
