Chocolate Latte Cupcakes

This delicious treat has a chocolate chip, coffee cupcake topped with coffee creme cheese frosting and is sure to satisfy a true coffee lover.

Ingredients

  • 100 grams of butter
  • 75 grams of creme cheese
  • 150 grams SR flour (substitute gluten free SR flour mix)
  • 150 grams sugar
  • 1/4 cup dark chocolate chips
  • 1/4 cup of cocoa powder
  • 2 x eggs
  • 2 x teaspoons coffee liqueur
  • 1 x teaspoon of coffee powder
  • Splash of milk

Method

  • Whisk room temperature butter and creme cheese so its fluffy and creamy. Add sugar and coffee liqueur, then whisk until dissolved.
  • Add eggs and continue to whisk until mixed.
  • Sift in flour and cocoa powder then stir in chocolate chips and coffee powder.
  • Spoon into cupcake papers in a muffin tin, about 1/2 to 3/4 full
  • Bake for 25 minutes in a medium oven

 


Frosting Ingredients

  • 50 grams melted, room temperature dark chocolate
  • 50 grams melted, room temperature white chocolate
  • 100 grams creme cheese
  • 100 grams icing sugar
  • 1 tsp coffee liqueur
  • 1 tsp coffee powder (preferably ground fresh beans)

Frosting Method

  • Melt chocolate, cool to room temperature
  • Whisk creme cheese till fluffy, add in melted chocolate
  • Stir in icing sugar, coffee liqueur and ground coffee
  • Pipe onto cupcakes using a piping bag and star shaped nozzle
