Chocolate Ganache

This is a very easy chocolate filling, you can use it in moulds or alternately brush melted chocolate around base and sides of foil cases then pipe filling in.

Ingredients

  • 100 ml fresh cream
  • 2.5 gm instant coffee powder
  • 137.5 gms good quality dark chocolate

Method

  • Bring cream to boil, then add coffee powder
  • Take cream off heat and add finely chopped chocolate
  • Stir untill chocolate is melted
  • Leave to cool before using, it will set quite firm if you leave it too long
