Choc Coconut Bars
This filling is delicious, I love the taste of coconut and chocolate together. This recipe is like a popular chocolate bar that you can buy in the shops. Any guesses? The photo above is a variation rolled into a ball and dipped in chocolate which you may find easier to make.
Ingredients
- 1/4 cup milk
- 1/2 cup castor sugar
- 1 2/3 cups dessicated coconut
- 1/4 cup icing sugar
- 1 egg white, lightly beaten
Choc Topping
- 100 gms milk melts, melted
- 3 teaspoons oil
Method
- Combine sugar and milk in small saucepan, stir constantly over heat without boiling till sugar is dissolved, remove from heat
- Cool 5 minutes
- Transfer to large bowl, stir in coconut, egg white and sifted icing sugar.
- Place mixture in piping bag with plain tube
- Pipe bars onto greaseproof covered tray, refrigerate till firm
- Cut into 2cm lengths then reshape
- Carefully pour topping over bars, move carefully to coat bottoms, allow to set at room temperature
Choc topping
- Combine hot chocolate with oil in small bowl, stir till smooth and of pouring consistency
As A Filling
- You can also use the coconut mixture as a filling in chocolate moulds
- Add peppermint, strawberry or musk oil for something different
