Chilli

 Chilli-----its enough to strike fear in some of us, to others its the nectar of the Gods, myself I am the mild variety, my husband usually makes anything with Chilli just a little to hot. I know some people who have it so hot it must burn their insides, while on our Australia trip we searched high and low for the hottest chilli things we could find, our prize find was a sausage called a 'bum burner' and was a chilli sausage covered with chilli flakes. Our friend said it was magnificent sliced over a home made Pizza.  Chillies come from the Capsicum family, and generally the smaller the chilli the hotter it is, habenero is said to be the hottest.  Capsicums are also called sweet peppers and come in red, green and yellow.  Chillies are used for flavourings in many dishes, cayenne pepper is the base of Tabasco sauce. chilli powder is made from cayenne, cumin garlic or marjoram. The juice can sting the eyes so never rub your eyes after touching, also dont touch your lips ( like a little girl I knew who did when told not to touch the bush!!!!!! ) Drink milk not water to take away the sting.  On our trip we found many kinds of chilli chutneys, pickles even a chilli jam, the possibilities are endless.
